Hey this is Michael 'Medium Rare' O'Donnell with Cave Tools and today we're going to talk about how to Veal cutlets with a meat mallet. So you're going to put your veal on a cutting board covered with some wax paper. You're going to use the smooth side of the meat mallet to tenderize the veal. it's important to keep in mind that veal is already a very very tender piece of meat. So you don't want to beat it up, you just want to take real little short strokes from the inside-out. The real main goal here is just to flatten out the veal and give us a little more room to work with when you're cooking. Just work around with a couple of short strokes, and you're good to go! There you go, there's our flattened out veal, and it's ready to cook. And as you can see the meat mallet is really the perfect tool to break down connective tissues if you’re trying to flatten out a piece of steak, or to flatten a piece of chicken.
