Jeremy Hansen is the chef who brought Santé, Inland Pacific Kitchen, Biscuit Wizard, Hogwash Whiskey Den, Common Crumb Bakery, and 509 Cooks to the Spokane area. A massive proponent for the ethics of preparing and serving food, Jeremy eventually brought the butcher in-house to Santé's basement. 509 Cooks is Jeremy's newest project. Designed to be a platform for individuals to get started in the culinary industry as well as a first responder, following the example set by the World Central Kitchen. We dive into Jeremy's experience before settling in Spokane, as well as his film project, Buen Provecho. Lastly, we discuss the role of regulation in our respective industries.
