Hey this is Michael ‘Medium Rare’ O’Donnell with http://cavetools.com. In this quick tutorial, we’re going to teach you how to tenderize and flatten a chicken cutlet with a meat mallet. So the first thing you want to do is put the chicken down on a cutting board. In this video, we’re using wax paper, some people to use saran wrap to cover the chicken. Either way works, you’re just making sure that you’re not getting meat splattering all over the place. So you start with the flat side of your meat mallet, and you want to start in the middle of the chicken, where the thickest part is. And as you’re hitting it, you can see we’re doing short strokes that are going from the middle and pointing out, and we’re starting to work in this circular fashion. And as you go around, it’s spreading that thick piece of chicken out more and more. The circular motion just helps to move it all out towards the outside of the chicken. You can continue to go until the chicken is as flat as you’d like, there really isn’t any “perfect” flatness of the chicken. Just do it until the chicken feels right, and after that you’re good to go. And as you can see the meat mallet is really the perfect tool to break down connective tissues if you’re trying to flatten out a piece of steak, or to flatten a piece of chicken. It really opens up a whole new range of recipes that you can try and you’ll start using a meat mallet in everyday cooking. Not a lot of people know, but it’s actually the secret kitchen tool behind a lot of fan favorite recipes such as country-fried steak, wiener schnitzel and cordon bleu. Really it’s like that secret weapon that will take a novice chef and right away people think you’re a pro because you’re cooking these absolutely delicious meals.
