Jesse Griffiths is the owner of Austin-based restaurants Dai Due & Dai Due Taqueria. He is also founded the New School of Traditional Cookery. Jesse is one of the earliest adopters of a strictly local ethos in his kitchens, heavily featuring game meat, produce, and flavors from within the borders of Texas and its coastal waters.
